1/2 red bell pepper, julienned and roasted
1 cup shredded Monterey Jack cheese
tortilla chips to decorate
2 plum tomatoes
1/4 cup pine nuts
1/4 cup olive oil
1 tablespoon minced garlic
4 bunches of fresh basil
1/4 cup lemon juice
3 anchovy strips (or to taste)
1/2 cup grated Parmesan cheese
12 oz. Beef steak (must be all 1 piece)
1 tablespoon chili powder
1 tablespoon granulated garlic
1/2 tablespoon ground cumin
1/2 tablespoon ground coriander
pinch of white pepper
Addresses
Combine chili powder, granulated garlic, cumin, coriander and white pepper; coat tenderloin with spice mixture. The coating should be about 1/8 inch thick. Grill for 15-20 minutes until medium. Let the meat cool down.
Meanwhile, combine the pine nuts, garlic, basil, lemon juice, anchovies, and Parmesan cheese in a food processor. Continue processing while adding the olive oil in a slow drizzle. Use a feeding tube if possible. If the mixture is too thick, add a little warm water or lemon juice.
Cut the lettuce through the leaves as for a standard Caesar salad and toss with the dressing. Arrange on plates, top with grated cheese, and place 3-4 meat strips per serving on top of salad. Garnish with tortilla chips, quartered tomatoes, red pepper strips, and a tablespoon of dressing on each beef strip.
