Pumpkin Cupcakes Recipe for a Thanksgiving Dessert

Okay, I couldn’t resist a last minute Thanksgiving dessert idea. This easy Thanksgiving recipe is easy to make. It’s a pumpkin cupcake recipe that takes only a few minutes but is delicious and will impress your guests.

One of the concepts I discuss at Budget Bash is making your parties as stress-free as possible. This Thanksgiving Dessert is an easy Thanksgiving recipe and I made these cupcakes just a few weeks ago and they turned out great.

I pulled this pumpkin cupcake recipe from Real Simple magazine and slightly modified it.

1 18.5-oz box yellow cake mix (plus ingredients listed in package directions)
Cinnamon, Ginger and Nutmeg to taste – In general terms I use on:
1 teaspoon cinnamon, ½ teaspoon ginger, and ¼ teaspoon nutmeg
1 can (15 oz) pumpkin puree
12 oz cream cheese (in stick form, not churned) – room temperature
6 oz butter – room temperature
2 cups of powdered sugar
½ teaspoon vanilla
½ teaspoon lemon juice

Heat oven to 350 degrees Fahrenheit. Use two 12-cup muffin tins and line with paper cupcake liners. Prepare cake mix as directed but with the following changes:

Add the cinnamon, ginger, and nutmeg to taste and substitute the can of pumpkin puree for the water indicated in the package directions.

Pour batter into cupcake liners halfway and bake for about 18 to 22 minutes or until set, then let cool.

Meanwhile, combine butter and cream cheese and beat until smooth. Make sure both are at room temperature so the frosting doesn’t have any lumps. Add the sugar and beat until smooth. Add the vanilla and lemon juice and mix.

Note that everyone has a slightly different version of the cream cheese frosting, so you may want to add more sugar or cream cheese, it’s up to you. Once the cupcakes have cooled, ice and serve.

You can put mini pumpkin candies on top of the cupcakes if you want an extra touch of decoration.

I hope you enjoy this easy Thanksgiving recipe for an extra Thanksgiving dessert on your dessert buffet or table. This pumpkin cupcakes recipe doesn’t take long to make and the cupcakes are delicious and moist. It’s also a welcome addition to another Thanksgiving dessert, like apple pie or pumpkin pie.

Until next time, remember the Budget Bash mantra: keep it simple, delicious, elegant, fun and affordable for everyone!
