How to bottle wild meat

Separate raw meat into pieces for cooking. Cut off the unwanted pieces. Make sure the meat is clean. Bush meat is very low in fat, so don’t try to trim what little fat it does have, as you’ll need it to cook it. The low fat content will keep the meat from shrinking as much during cooking.

Season the meat as desired, however less seasoning is better. Double check for game debris such as shrapnel, bloodshot meat, hair and dirt, etc. etc. Make sure your meat is clean.

Cook the meat with the recipe you prefer. Wild meat will dry out faster than tame meats due to less fat. Monitor cooking closely.

This is a great way to bottle moose, caribou, rabbit, or partridge meat.

500ml Mason Jars. Cut the meat into small bite-sized pieces, preferably slightly larger. Use stewed meat or a tender part of the meat.

Use salt pork and onions. Cut the pork into small pieces (Bite size) Chop the onion into small pieces.

Place a piece of salt pork in the bottom of the Mason jar with some onion. Add the meat. When the Mason jar is half full, add another small piece of onion and lard. The amount of onion and pork fat depends on the taste of each one.

Fill the mason jar. Leave room for a little more onion and bacon on top, add water to cover the meat. If you want you can add a little pepper

Preheat the oven for 15 minutes at 300. Place the meat on a tray in the oven and cook at 275

Check every hour or so and make sure the meat has enough water. Just above the top of the meat

Wait 3 hours for meat to cook through, but be careful not to overcook. Look closely depending on the game and stovetop meat may cook faster.

No checking a pot of meat on the stove. It’s a great way to cook and bottle wild meat. Cook until tender or to your liking’

When the meat is almost done, take the lids and boil them in a pot to make sure the rubber seals are soft so they can seal well. When you’re done, take the bottles out of the tray. Make sure the tops of the bottles are clean. For a good seal, wipe dry. Fit caps hand tight. Wait a few minutes until you hear a pop. That means the covers have sealed well. let’s chill. Make sure you have a good seal and that the covers are tight.
